SUMMERVEGGIE RICOTTA TART

veggie ricotta tartThis is such a great summer appetizer, side dish, or even a light lunch. Now pour yourself a glass of your favorite crisp white wine, and your good to go!

  • 2 large eggs ,  lightly beaten
  • Prepared Pie Crust
  • 1 generous cup of part skim ricotta cheese
  • 4 TBSP half and half
  • ½ cup parmesan cheese – or your choice
  • Pinch of fresh herbs ( I use basil or thyme)
  • Salt and pepper to taste
  • Sautéed mixed veggies of choice( I use whatever on hand mushrooms/onion/peppers/zucchini /potatoes

 

  1. Preheat Oven 350
  2. In a mixing bowl mix ricotta cheese, eggs, milk. Cheese ,herbs,
    Salt, pepper and the veggies once done.
  3. Pour into prepared pie crust and top with sliced tomato and
    Smoked cheese ( cheddar ,provolone or swiss)
  4. Bake for 40-45 min
  5. Enjoy!
